Mustard oil or mustard oil is made from an agricultural product. Mustard oil is the juice that comes out of crushing mustard seeds. This oil is used in cooking and body massage. This oil has a lot of bitterness. There is a specialty in cooking for this Stinging. It is so volatile due to the presence of a volatile sulfur-containing compound called allyl isothiocyanate. However, mustard oil does not taste good until it comes in contact with water. However, pure mustard oil does not contain allyl isothiocyanate. It contains its glucosinolate compound called singrin. An enzyme called myrosinase is activated by mixing or stirring with water or acid to separate the glucose from the synergine to form the bitter allyl isothyocyanate.
Distillation of this oil also activates myrosinase at high temperatures. As a result, allyl isothiocyanate disappears. This scented oil is then obtained by thickening it. It can be prepared artificially by chemical reaction of allyl potassium and iodide thiocyanate. It is called artificial mustard oil. It is used to flavor mustard oil in food.

Fox seed oil is often used to give cheap adulteration in this oil. This adulteration was noticed in the oil of some famous edible oil companies in 1997. This causes poisoning in about 2500 people. The incident killed 85 people. Due to this the use of mustard oil is decreasing day by day.
